This was REALLY good and REALLY easy to make! Takes 20-30 min tops.
Zesty BBQ Chicken Quinoa Bowl
Ingredients: - Chicken - Quinoa - Corn - Jalapeño
- Tomato
- Black beans
- Cilantro
- Lime
- Homemade BBQ sauce (recipe below)
Directions:
1. Start by preheating the oven to 400 degrees to bake the chicken and boil water to cook the quinoa. Bake the chicken and cook the quinoa both for about 20 minutes.
2. Then, in a cast iron pan, make the BBQ sauce (recipe below)
3. Transfer the BBQ Sauce to a dish and add corn cut off the cob, a diced tomato, can of black beans, 1 sliced jalapeño, some cilantro, and 1 squeezed lime to the cast iron pan that has the residual sauce
4. Prepare your bowl by adding quinoa as the base, your zesty corn salsa, sliced chicken, and top it off with BBQ sauce.
BBQ Sauce Recipe
Ingredients:
- Ketchup (2 cups)
- Apple cider vinegar (1 cup)
- Brown sugar (3 tbs)
- Worcestershire sauce (1 tbs)
- Whole grain mustard (1 1/2 tbs)
- Smoked paprika (2 1/2 tbs)
- Hot sauce (1 tbs)
- Salt/pepper to taste
Directions: 1. Place all the ingredients in a pan over medium-low heat. Stir to combine. Make alterations to taste 2. Bring to a simmer, then reduce heat to low. Simmer for 8-10 minutes or until thickened. * Store in an airtight container in the fridge for up to one week, or freeze for up to 3 months.
