I am allergic to onion, garlic, and cheese, so while I love homemade ravioli, I had NEVER had the opportunity to buy ravioli at the store or at a restaurant. That is, until I found the Trader Joe's butternut squash raviolis. They are so sweet and tasty, the texture is amazing, AND they take no time at all to make!!
Ingredients:
1 package of trader joes butternut squash
1 sweet potato (cubed)
1 cup of brussels sprouts (quarters)
3 tablespoons of butter
Olive oil
Thyme
Salt and pepper
Balsamic vinegar
Lemon juice
Instructions:
Preheat oven to 400
On a baking sheet, toss the sweet potato and brussels sprouts with 2 tablespoons of olive oil, thyme, salt and pepper. Bake for 30 min.
While the vegetables are baking, cook the ravioli according to the package
Simmer butter in a medium saucepan over medium heat until golden and fragrant, 3-5 min. Remove from heat. Add balsamic vinegar and lemon juice
Toss the ravioli, sweet potatoes, brussels sprouts, with the brown butter sauce, assemble on a serving dish, top with salt, pepper, and thyme. Serve, and enjoy!
