I LOVE EGGS

So, I was born allergic to eggs.


Fast forward 21 years, I am in college and breaking out in rashes due to a new found allergy (read: I have a lot of allergies and I’m rolling my eyes).


Anyways, I go to the allergist and they run a bunch of tests, as they do, to see what is making me break out.

If you’ve never been to the allergist, they do pricks along your arms (back, legs, soul) with different allergens, wait a couple minutes, and if you break out in a mosquito bite-like bump at the prick site then you’ve found something you’re allergic to.

So on this occasion they pricked me with a sleeve full of dust, pollen, and mold allergens they were testing for and pricked me with some existing allergies to compare. My allergist goes ‘...aren’t you allergic to eggs?’ when he reads my results. Me: yep Allergist: well it looks like you’ve outgrown it, but be careful you’ve never eaten an egg before so you are probably intolerant to them. Me, a stubborn and poor as shit college student who sees $1 carton of eggs: Okay!

Next morning is a Sunday and my best friend’s 21st birthday. We do brunch and I order the egg sandwich. Watch out world, Danielle is here to thrive in this brunch world!

I was violently ill for 3 days... but still stubborn!

Once back to school, I decided I would hard boil an egg and eat the smaller sliver of it. I didn’t get sick. Next week I ate two slivers, then 3. A month later I was able to eat 1/2 an egg, and finally I was able to eat eggs!!!!! They were my FAVORITE food. I literally tried every egg recipe and cooking method.

My favorite egg recipe?? If you guessed eggs in a basket, or whatever is pictured below (it’s eggs in a basket) then you’re correct!


RECIPE:

You take a piece of sourdough bread and put it on a skillet

Cut or pull out the center of the slice of bread and crack and egg in the hole

When the egg is firm enough on the bottom (about a minute or two), flip it over and cook for another minute.

You want the egg to be runny because the bread soaks it up. I cook eggs at a very low heat so it takes a bit longer but if you are cooking it at more of a frying heat you may want to flip even faster.

Then you're done! Plate it and, if you're me, add a ton of hot sauce.
